Understand what changes the cup.

A useful experiment starts with a clear question. Keep notes, compare like with like, and let taste tell you what to explore next.

01

Strength & extraction

Strength describes concentration; extraction describes how much of the coffee dissolves. A longer espresso yield usually reduces strength while increasing extraction. These are different changes, so record dose and output separately.

02

Taste before changing the numbers

Time and flow help diagnose a brew. Keep dose and target output consistent while exploring grind size. Once the cup flows reasonably, choose the next change by taste. Fruit-like acidity can be pleasant; sharpness alone does not identify a fault.

03

Make the brew repeatable

Keep the coffee, water, dose and technique consistent while changing one variable. For filter, distinguish a weak but balanced cup from one that lacks extraction. Use a small, deliberate change and taste again.

04

Start with a FLO reference

Use 13 g coffee and 200 g water, Varia FLO paper and the Medium screen. Pour four 50 g additions. Approximately 2:10–2:30 is a starting reference; your coffee and technique will change the result.

RETAILER REVIEW / VS4

Retention, with context.

In his Whole Latte Love VS4 review, John Cannon reports retention below 0.1 g for the espresso shots he tested at 150 and 300 RPM, noting his use of the bellows. The article also includes Varia-supplied retention tests, which are separate from his observations. These results describe those conditions, rather than a guarantee for every coffee.
