FLO / VARIA × KURASU
What happens below the coffee bed?
FLO begins with a familiar pour-over and asks a second question: what could change if the flow screen changed?
Varia Brewing · Product stories
Watch a pour-over and the attention naturally goes to the kettle: the height of the stream, its path over the bed, the pause before the next pour. Below the paper, another part of the brew is taking shape.
FLO makes that area available to explore. Developed through the collaboration between Varia and Kurasu, the dripper pairs a double-wall stainless steel body with interchangeable flow screens. Fast, Medium and Slow screens are included, giving the same brewer three starting points.
Change one thing you can name.
A screen is one variable among several. Coffee, grind size, paper and pouring all contribute to what happens in the brewer. A longer drawdown on its own does not tell you whether the cup is better.
Begin with one screen and a repeatable recipe. Taste the result. For a comparison, keep the coffee, dose, water and pouring sequence the same, then change the screen. Record what happened to both the brew time and the flavour. The useful result is something you can recognise in the cup.
Start with a Kurasu reference.
For a first brew, use 13 g of coffee and 200 g of water with a Medium screen, a medium grind and Varia FLO filter paper sized for the dripper. Pour 50 g at the start, then another 50 g at 0:30, 1:00 and 1:30. The final scale reading is 200 g of water added.
Use approximately 2:10–2:30 as an initial finish-time reference. This sequence follows Kurasu’s published FLO guide; the instructions here are written for Varia’s own paper. Actual drawdown varies with the coffee, grind and paper, so use taste to guide the next adjustment.
Let the comparison teach you.
Keep a short record: screen, grind setting, finish time and a few words about the cup. A second brew with one deliberate change is easier to learn from than several adjustments made together.
That is the invitation in FLO. A familiar brewer can still offer another angle on a familiar coffee. The screens give you a way to ask the question again.
